Black Eye Bean & Spinach Curry

A light and nutritious curry made with black eye beans and spinach, perfect for healthy midweek meals.

Ingredients

  • 1 cup Lioncroft Black Eye Beans (boiled or canned)
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 tsp Lioncroft Ground Coriander
  • ½ tsp Lioncroft Turmeric Powder
  • ½ tsp Lioncroft Ginger Powder
  • ½ tsp cumin seeds
  • 2 cups fresh spinach
  • Salt to taste
Heat oil and crackle cumin seeds
Fry onions until golden
Add tomatoes and cook
Add spices and beans
Add spinach and simmer

Serve with rice, roti or naan, plus lemon wedges for freshness.
