A vibrant mixed vegetable balti made with Lioncroft Balti Paste. Healthy, colourful and delicious.
| 1. Heat oil in a balti pan or wok over high heat. |
| 2. Add onion and garlic, stir-frying until soft. |
| 3. Add mixed vegetables and stir-fry for 5 minutes. |
| 4. Stir in balti paste and cook for 2 minutes. |
| 5. Add tomatoes and cook for 5 minutes. |
| 6. Pour in water, season with salt and simmer for 15-20 minutes until vegetables are tender. |
| 7. Garnish with fresh coriander. |
Serve hot with rice or naan.
