Vegetable Balti

A vibrant mixed vegetable balti made with Lioncroft Balti Paste. Healthy, colourful and delicious.

Ingredients

  • 2 cups mixed vegetables (cauliflower, carrots, peas, beans)
  • 3 tbsp Lioncroft Balti Paste
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 cup water
  • Salt to taste
  • Fresh coriander, chopped
1. Heat oil in a balti pan or wok over high heat.
2. Add onion and garlic, stir-frying until soft.
3. Add mixed vegetables and stir-fry for 5 minutes.
4. Stir in balti paste and cook for 2 minutes.
5. Add tomatoes and cook for 5 minutes.
6. Pour in water, season with salt and simmer for 15-20 minutes until vegetables are tender.
7. Garnish with fresh coriander.

🍽️ Serving Suggestion

Serve hot with rice or naan.
