Tomato & Onion Curry Base

A versatile slow-cooked curry base made with Lioncroft Chopped/Peeled Tomatoes. Perfect for building curries and gravies.

Ingredients

  • 1 can (400g) Lioncroft Chopped/Peeled Tomatoes
  • 2 medium onions, finely chopped
  • 3 tbsp Lioncroft Sunflower Oil
  • 2 garlic cloves, minced
  • 1 tsp Lioncroft Ginger Powder
  • 1 tsp Lioncroft Ground Cumin
  • 1 tsp Lioncroft Ground Coriander
  • 1 tsp Lioncroft Turmeric Powder
  • ½ tsp red chilli powder
  • Salt to taste
1.Heat oil in a pan and add the chopped onions.
2.Cook on low-medium heat, stirring frequently, until the onions are soft and golden brown (about 15–20 minutes).
3.Add garlic and ginger powder, cooking for 1 minute.
4.Stir in cumin, coriander, turmeric and chilli powder.
5.Add the chopped tomatoes and season with salt.
6.Cook on low heat for 20–25 minutes, stirring occasionally, until the tomatoes break down and the oil separates.
7.Use immediately as a base for chicken, lamb, paneer or vegetable curries.

🍽️ Serving Suggestion

Use as a curry base and add your protein or vegetables of choice, then serve with rice or bread.
