A tangy, sweet and spicy sauce made from Lioncroft Tamarind Slabs. Versatile and delicious with snacks, noodles and stir-fries.
| 1.Soak the tamarind slab in warm water for 15–20 minutes until soft. |
| 2.Mash and strain through a sieve to extract smooth tamarind paste. Discard the pulp and seeds. |
| 3.In a small saucepan, combine the tamarind paste, sugar, salt, chilli powder and cumin. |
| 4.Cook over low heat, stirring continuously, for 5–7 minutes until the sauce thickens slightly. |
| 5.Adjust sweetness, salt and spice to taste. |
| 6.Let it cool and store in a clean jar. |
Use as a dipping sauce for samosas, pakoras, spring rolls, or drizzle over noodles and stir-fries.
