| 1. Drain soaked sago and squeeze out excess water. |
| 2. Mix sago with mashed potatoes, green chillies, cumin seeds, peanuts, coriander and salt. |
| 3. Shape into small round patties or balls. |
| 4. Heat oil in a deep pan. |
| 5. Deep fry vadas until golden and crispy, about 3-4 minutes. |
| 6. Drain on paper towels. |
Serve hot with green chutney or sweet tamarind chutney.
