A comforting, hearty curry made with Lioncroft Rose Coco Beans in brine. Rich in protein and perfect for a wholesome meal.
| 1.Heat oil in a pan and sauté the onion until golden. |
| 2.Add garlic and cook for 1 minute until fragrant. |
| 3.Add chopped tomatoes and cook until soft and pulpy. |
| 4.Stir in cumin, coriander, turmeric and chilli powder. |
| 5.Add the drained rose coco beans and mix well. |
| 6.Pour in water, season with salt and bring to a simmer. |
| 7.Cook for 15–20 minutes, stirring occasionally, until the curry thickens. |
| 8.Garnish with fresh coriander. |
Serve hot with steamed rice, chapati or crusty bread.
