Rose Coco Bean & Tomato

A comforting, hearty curry made with Lioncroft Rose Coco Beans in brine. Rich in protein and perfect for a wholesome meal.

Ingredients

  • 1 can (400g) Lioncroft Rose Coco Beans in Brine, drained
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 medium onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, mincedb
  • 1 tsp Lioncroft Ground Cumin
  • 1 tsp Lioncroft Ground Coriander
  • 1 tsp Lioncroft Turmeric Powder
  • ½ tsp red chilli powder
  • Salt to taste
  • 1 cup water
  • Fresh coriander, chopped
1.Heat oil in a pan and sauté the onion until golden.
2.Add garlic and cook for 1 minute until fragrant.
3.Add chopped tomatoes and cook until soft and pulpy.
4.Stir in cumin, coriander, turmeric and chilli powder.
5.Add the drained rose coco beans and mix well.
6.Pour in water, season with salt and bring to a simmer.
7.Cook for 15–20 minutes, stirring occasionally, until the curry thickens.
8.Garnish with fresh coriander.

🍽️ Serving Suggestion

Serve hot with steamed rice, chapati or crusty bread.
