| 1. Rinse the drained beans under cold water. |
| 2. In a large bowl, combine beans, cucumber, tomatoes and onion. |
| 3. Add crumbled feta cheese. |
| 4. Drizzle with oil and lemon juice. |
| 5. Season with oregano, salt and pepper. |
| 6. Toss gently and garnish with parsley. |
| 7. Chill for 15 minutes before serving. |
Serve chilled as a light lunch or side dish with grilled meats.
