Red Lentil Patties

Red Lentil Patties

Crispy, flavourful patties made with Lioncroft Red Lentils. Perfect as a snack, starter or light meal.

Ingredients

  • 1 cup Lioncroft Red Lentils, rinsed
  • 2 cups water
  • 1 small onion, finely chopped
  • 1 green chilli, finely chopped
  • 1 tsp Lioncroft Ground Cumin
  • 1 tsp Lioncroft Ground Coriander
  • ½ tsp Lioncroft Turmeric Powder
  • Salt to taste
  • 2 tbsp breadcrumbs or flour (for binding)
  • Lioncroft Sunflower Oil for frying
  • Fresh coriander, chopped
1.Cook the red lentils in water until soft and all water is absorbed (about 15 minutes). Let cool.
2.Mash the cooked lentils with a fork until mostly smooth.
3.Add chopped onion, green chilli, cumin, coriander, turmeric, salt, coriander and breadcrumbs.
4.Mix well until the mixture holds together. If too wet, add more breadcrumbs.
5.Shape the mixture into small patties.
6.Heat oil in a pan and shallow fry the patties until golden brown on both sides, about 3–4 minutes per side.
7.Drain on paper towels.

🍽️ Serving Suggestion

Serve hot with mint chutney, ketchup or yogurt dip.
