Crispy, flavourful patties made with Lioncroft Red Lentils. Perfect as a snack, starter or light meal.
| 1.Cook the red lentils in water until soft and all water is absorbed (about 15 minutes). Let cool. |
| 2.Mash the cooked lentils with a fork until mostly smooth. |
| 3.Add chopped onion, green chilli, cumin, coriander, turmeric, salt, coriander and breadcrumbs. |
| 4.Mix well until the mixture holds together. If too wet, add more breadcrumbs. |
| 5.Shape the mixture into small patties. |
| 6.Heat oil in a pan and shallow fry the patties until golden brown on both sides, about 3–4 minutes per side. |
| 7.Drain on paper towels. |
Serve hot with mint chutney, ketchup or yogurt dip.
