Plum Chicken Stew

A hearty, sweet-savoury chicken stew with Lioncroft Dried Plums. Warming and perfect for family dinners.

Ingredients

  • 500g chicken pieces
  • ½ cup Lioncroft Dried Plums, pitted and chopped
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 potatoes, cubed
  • 2 cups chicken stock
  • 1 tsp Lioncroft Ground Cumin
  • ½ tsp Lioncroft Cinnamon Powder
  • Salt and pepper to taste
  • Fresh parsley, chopped
1. Heat oil in a large pot and brown chicken pieces. Remove and set aside.
2. In the same pot, sauté onion until soft.
3. Add carrots and potatoes, cooking for 3-4 minutes.
4. Return chicken to the pot and add chopped plums.
5. Pour in chicken stock and add cumin, cinnamon, salt and pepper.
6. Bring to a boil, then reduce heat and simmer for 30-35 minutes until chicken is tender.
7. Garnish with parsley.

Serve hot with crusty bread or over rice.
