Pistachio Rice

Fragrant basmati rice tossed with crushed Lioncroft Roasted Pistachios and butter. Elegant, simple and perfect for special meals.

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • ΒΌ cup Lioncroft Roasted Pistachios, crushed
  • 2 tbsp butter
  • Salt to taste
  • Fresh parsley, chopped (optional)
1.Rinse basmati rice until water runs clear and soak for 15 minutes.
2.In a pot, bring water to a boil with salt.
3.Drain the rice and add to the boiling water.
4.Cover and simmer on low heat for 12–15 minutes until rice is cooked and water is absorbed.
5.In a small pan, melt butter and add the crushed pistachios. Lightly toast for 1–2 minutes.
6.Fluff the rice with a fork and gently fold in the pistachio butter.
7.Garnish with fresh parsley.

🍽️ Serving Suggestion

Serve warm as a side dish with grilled meats, fish or curries.
