| 1.Rinse basmati rice until water runs clear and soak for 15 minutes. |
| 2.In a pot, bring water to a boil with salt. |
| 3.Drain the rice and add to the boiling water. |
| 4.Cover and simmer on low heat for 12β15 minutes until rice is cooked and water is absorbed. |
| 5.In a small pan, melt butter and add the crushed pistachios. Lightly toast for 1β2 minutes. |
| 6.Fluff the rice with a fork and gently fold in the pistachio butter. |
| 7.Garnish with fresh parsley. |
Serve warm as a side dish with grilled meats, fish or curries.
