| 1.Preheat the oven to 200°C (400°F). |
| 2.Season chicken breasts with salt and pepper. |
| 3.In a shallow bowl, mix crushed pistachios, breadcrumbs and garlic powder. |
| 4.Dip each chicken breast in beaten egg, then coat thoroughly with the pistachio mixture. |
| 5.Place the coated chicken on a greased baking tray. |
| 6.Drizzle with oil. |
| 7.Bake for 25–30 minutes until golden and cooked through. |
Serve hot with roasted vegetables, mashed potatoes or a fresh salad.
