Pistachio Chicken Crumb Coating

A unique, crunchy coating for baked chicken made with crushed Lioncroft Roasted Pistachios. Flavourful and elegant.

Ingredients

  • 4 chicken breast fillets
  • ½ cup Lioncroft Roasted Pistachios, finely crushed
  • ½ cup breadcrumbs
  • 2 eggs, beaten
  • ½ tsp Lioncroft Garlic Powder
  • Salt and black pepper to taste
  • 2 tbsp Lioncroft Sunflower Oil
1.Preheat the oven to 200°C (400°F).
2.Season chicken breasts with salt and pepper.
3.In a shallow bowl, mix crushed pistachios, breadcrumbs and garlic powder.
4.Dip each chicken breast in beaten egg, then coat thoroughly with the pistachio mixture.
5.Place the coated chicken on a greased baking tray.
6.Drizzle with oil.
7.Bake for 25–30 minutes until golden and cooked through.

Serve hot with roasted vegetables, mashed potatoes or a fresh salad.
