Pickle Stuffed Kulcha

Soft, fluffy kulcha stuffed with spiced mango pickle filling. Perfect with curries or as a standalone snack. Serves: 4 people Total cooking time: 2 hours 30 minutes

Ingredients

  • 2 cups all-purpose flour
  • ½ cup plain yogurt
  • 1 tsp sugar
  • ½ tsp baking powder
  • Salt to taste
  • Warm water as needed
  • 3 tbsp Lioncroft Mango Pickle, finely chopped
  • 1 small onion, finely chopped
  • Fresh coriander, chopped
  • Butter for brushing
1. Mix flour, yogurt, sugar, baking powder and salt. Knead into soft dough with warm water.
2. Rest covered for 2 hours.
3. Mix chopped pickle, onion and coriander for filling.
4. Divide dough into balls, roll into small circles.
5. Place filling in center, seal edges and roll gently into thick discs.
6. Cook on a hot griddle until golden spots appear on both sides.
7. Brush with butter while hot.

Serve hot with dal makhani, chole or any rich curry.
