| 1.Butter one side of each bread slice. |
| 2.On the unbuttered side of two slices, spread a thin layer of mixed pickle. |
| 3.Add cheese slices and onion rings on top of the pickle. |
| 4.Cover with the remaining bread slices, buttered side facing out. |
| 5.Heat a grill pan or sandwich maker. |
| 6.Grill the sandwiches until golden brown and crisp on both sides, about 3–4 minutes per side. |
| 7.Remove and cut diagonally. |
Serve hot with tomato ketchup or mint chutney and a cup of masala chai.
