A refreshing, creamy pea soup with Lioncroft Mint Sauce. Light and perfect for spring or summer.
| 1. Heat oil in a pot and sauté onion until soft. |
| 2. Add peas and vegetable stock. |
| 3. Bring to a boil, then reduce heat and simmer for 10 minutes. |
| 4. Stir in mint sauce. |
| 5. Blend until smooth using a hand blender. |
| 6. Add cream if desired and season with salt and pepper. |
| 7. Reheat gently and garnish with mint leaves. |
Serve hot or chilled with crusty bread.
