Aromatic roasted vegetables seasoned with Lioncroft Fennel Seeds. Simple, flavourful and perfect as a side dish.
| 1.Preheat the oven to 200°C (400°F). |
| 2.Place chopped carrots and potatoes in a large bowl. |
| 3.Drizzle with oil and add crushed fennel seeds, salt and pepper. |
| 4.Toss until vegetables are evenly coated. |
| 5.Spread on a baking tray in a single layer. |
| 6.Roast for 30–35 minutes, turning halfway, until golden and tender. |
| 7.Garnish with fresh parsley if desired. |
Serve hot as a side dish with roasted meats or grilled fish.
