Fennel Spiced Roasted Vegetables

Aromatic roasted vegetables seasoned with Lioncroft Fennel Seeds. Simple, flavourful and perfect as a side dish.

Ingredients

  • 2 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and chopped
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 tsp Lioncroft Fennel Seeds, crushed
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)
1.Preheat the oven to 200°C (400°F).
2.Place chopped carrots and potatoes in a large bowl.
3.Drizzle with oil and add crushed fennel seeds, salt and pepper.
4.Toss until vegetables are evenly coated.
5.Spread on a baking tray in a single layer.
6.Roast for 30–35 minutes, turning halfway, until golden and tender.
7.Garnish with fresh parsley if desired.

🍽️ Serving Suggestion

Serve hot as a side dish with roasted meats or grilled fish.
