Dried Plum Rice Pilaf

Dried Plum Rice Pilaf

A fragrant, mildly sweet rice dish made with Lioncroft Dried Plums. Aromatic and unique, perfect for special occasions or weeknight variety.

Ingredients

  • 1 cup basmati rice
  • ¼ cup Lioncroft Dried Plums, chopped
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 tsp Lioncroft Ground Cumin
  • 1 small onion, thinly sliced
  • 2 cups water
  • Salt to taste
  • ½ tsp Lioncroft Turmeric Powder
  • Fresh coriander, for garnish
1.Rinse the basmati rice until water runs clear and soak for 15 minutes.
2.Heat oil in a pan and fry the sliced onion until golden brown.
3.Add cumin and turmeric, stirring for 30 seconds.
4.Add the chopped dried plums and stir for 1 minute.
5.Drain the rice and add to the pan, stirring gently to coat.
6.Pour in water and add salt.
7.Bring to a boil, then reduce heat, cover and simmer for 15 minutes until rice is cooked and water is absorbed.
8.Fluff with a fork and garnish with coriander.

🍽️ Serving Suggestion

Serve warm with raita, curry or grilled meats.
