Black Eye Bean Fritters

Crispy, spiced fritters made with Lioncroft Black Eye Beans. Perfect as a snack or appetizer.

Ingredients

  • 1 can (400g) Lioncroft Black Eye Beans in Brine, drained
  • 1 small onion, finely chopped
  • 2 green chillies, finely chopped
  • 1 tsp Lioncroft Ground Cumin
  • 1 tsp Lioncroft Ground Coriander
  • ½ tsp Lioncroft Turmeric Powder
  • 3 tbsp chickpea flour (besan)
  • Salt to taste
  • Fresh coriander, chopped
  • Lioncroft Sunflower Oil for frying
1. Mash the drained beans coarsely.
2. Mix with onion, green chillies, cumin, coriander, turmeric, chickpea flour, salt and coriander.
3. The mixture should hold together; add more chickpea flour if needed.
4. Shape into small patties or balls.
5. Heat oil in a pan and shallow fry until golden brown on all sides.
6. Drain on paper towels.

🍽️ Serving Suggestion

Serve hot with mint chutney or tamarind sauce.
