Crispy, spiced fritters made with Lioncroft Black Eye Beans. Perfect as a snack or appetizer.
| 1. Mash the drained beans coarsely. |
| 2. Mix with onion, green chillies, cumin, coriander, turmeric, chickpea flour, salt and coriander. |
| 3. The mixture should hold together; add more chickpea flour if needed. |
| 4. Shape into small patties or balls. |
| 5. Heat oil in a pan and shallow fry until golden brown on all sides. |
| 6. Drain on paper towels. |
Serve hot with mint chutney or tamarind sauce.
