Black Eye Bean Chaat

A tangy, spicy Indian street-food style chaat made with Lioncroft Black Eye Beans. Light, fresh and full of flavour.

Ingredients

  • 1 can (400g) Lioncroft Black Eye Beans in Brine, drained
  • 1 medium onion, finely chopped
  • 1 medium tomato, chopped
  • 2 tbsp lemon juice
  • 1 tsp chaat masala
  • Salt to taste
  • Fresh coriander, choppedf
  • 1 green chilli, finely chopped (optional)
1.Rinse the drained black eye beans under cold water and pat dry.
2.In a large bowl, combine the beans, onion, tomato and green chilli.
3.Add lemon juice, chaat masala, cumin and salt.
4.Toss everything together until well mixed.
5.Garnish with fresh coriander.
6.Let it sit for 5 minutes to allow flavours to meld.

🍽️ Serving Suggestion

Serve chilled or at room temperature as a healthy snack or side dish.
