A tangy, spicy Indian street-food style chaat made with Lioncroft Black Eye Beans. Light, fresh and full of flavour.
| 1.Rinse the drained black eye beans under cold water and pat dry. |
| 2.In a large bowl, combine the beans, onion, tomato and green chilli. |
| 3.Add lemon juice, chaat masala, cumin and salt. |
| 4.Toss everything together until well mixed. |
| 5.Garnish with fresh coriander. |
| 6.Let it sit for 5 minutes to allow flavours to meld. |
Serve chilled or at room temperature as a healthy snack or side dish.
