Bean Tacos

Quick, flavourful tacos filled with spiced Lioncroft Red Kidney Beans. Perfect for a fun weeknight dinner.

Ingredients

  • 1 can (400g) Lioncroft Red Kidney Beans, drained
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp Lioncroft Ground Cumin
  • 1 tsp Lioncroft Paprika
  • ½ tsp chilli powder
  • Salt to taste
  • 8 taco shells
  • Toppings: shredded lettuce, diced tomatoes, cheese, sour cream, salsa
1. Heat oil in a pan and sauté onion and garlic until soft.
2. Add drained beans, cumin, paprika, chilli powder and salt.
3. Mash some of the beans with a fork while cooking for 5-7 minutes.
4. Warm taco shells according to package instructions.
5. Fill each shell with bean mixture and top with your favorite toppings.

🍽️ Serving Suggestion

Serve immediately with extra salsa and lime wedges.
