Bean & Sausage Casserole

A hearty, warming casserole with Lioncroft Rose Coco Beans and sausages. Perfect comfort food for cold days. Serves: 4 people Total cooking time: 50 minutes

Ingredients

  • 1 can (400g) Lioncroft Rose Coco Beans in Brine, drained
  • 4 sausages, sliced
  • 2 tbsp Lioncroft Sunflower Oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 can (400g) Lioncroft Chopped Tomatoes
  • 1 tsp Lioncroft Paprika
  • 1 tsp dried thyme
  • 1 cup vegetable stock
  • Salt and pepper to taste
  • Fresh parsley, chopped
1. Preheat oven to 180°C (350°F).
2. Heat oil in an oven-safe casserole dish and brown the sausage slices.
3. Add onion and garlic, cooking until soft.
4. Stir in chopped tomatoes, paprika and thyme.
5. Add drained beans and vegetable stock.
6. Season with salt and pepper.
7. Cover and bake for 30-35 minutes.
8. Garnish with parsley.

Serve hot with crusty bread or mashed potatoes.
