| 1. Preheat oven to 180°C (350°F). |
| 2. Heat oil in an oven-safe casserole dish and brown the sausage slices. |
| 3. Add onion and garlic, cooking until soft. |
| 4. Stir in chopped tomatoes, paprika and thyme. |
| 5. Add drained beans and vegetable stock. |
| 6. Season with salt and pepper. |
| 7. Cover and bake for 30-35 minutes. |
| 8. Garnish with parsley. |
Serve hot with crusty bread or mashed potatoes.
